Jamaican dumplings: A classic taste of the Islands

Few things say comfort quite like a plate of hot Jamaican dumplings. Known as Johnny Cakes or Festival, these golden little loaves are crisp on the outside, soft on the inside and deeply woven into the fabric of Jamaican cuisine.

They’re the kind of food that brings people together, simple yet full of flavour, humble yet celebrated. You’ll find them served at street stalls alongside fried fish fresh from the pan, next to smoky jerk chicken straight off the grill, or simply enjoyed on their own as a quick snack.

What makes Jamaican dumplings so special is their versatility. With just a handful of pantry staples, you can create something that feels like a celebration every time it’s served. Some families prefer them savoury, others like a touch of sweetness with sugar added to the dough. However you make them, they always carry a little taste of home.

Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar (optional, for a slightly sweet flavour)
2 tablespoons butter or margarine, at room temperature
About 3/4 cup water
Vegetable oil, for frying

Method

  1. In a large bowl, combine flour, baking powder, salt and sugar (if using). Mix well.

  2. Rub in the butter with your fingertips until the mixture looks like coarse crumbs.

  3. Slowly add the water, a little at a time, until a smooth dough comes together. You may not need all the water.

  4. Knead lightly on a floured surface until the dough is soft and elastic.

  5. Break off small pieces, about the size of a golf ball, and roll into smooth balls.

  6. Heat oil in a deep pan over medium heat. Once hot, carefully drop in the dumplings, being careful not to overcrowd the pan.

  7. Fry until golden brown on all sides, turning occasionally, for around 5–8 minutes.

  8. Lift out with a slotted spoon and drain on paper towels. Serve warm.

Baked version
If you’d like a lighter take, these dumplings can also be baked. Preheat your oven to 175°C (350°F), gas mark 4. Place the shaped dough balls on a greased tray and bake for 20–25 minutes until golden.
